“After a few years in Provence, it was here in the Oise region that I honed my skills, surrounded by passionate people and ingredients that convey meaning and flavor.

Today, I’m lucky enough to be at the helm of the gourmet restaurant at the InterContinental Chantilly Château Mont Royal.

In this unique setting, nestled in the heart of the Chantilly forest, I strive every day to put the spotlight on French cuisine: fair produce, committed producers and sincere cooking.
